Welcome to the new cooking school at Bella Vedere. After two & a half years of creating a restaurant with its own kitchen garden serving breakfast, lunch & dinner, Bella is ready to share its culinary daily experience with you, exploring organic seasonal flavours from its own garden & small producers in the Yarra Valley Region.

Gary wants to share with you what it takes every day to create a new menu. This will give you a chance to explore, create & cook what is going to be on the lunch menu for that day.

Every day the Bella Vedere kitchen team enjoy the spontaneity of cooking. Each chef helps create and cook the menu for the day, In these classes with Gary you to will be able to join the team creating the menu.

There are no themed classes. Classes will be an open forum, giving each person a chance to demystify & question the process or creativity of cooking.

Areas to explore for each class will include, cold larder, sweet pies, savoury pies, savoury dishes, sauces, picking from the garden, preserving and anything else you might like to explore, depending on the season or its availability on the day.

The class is shaped by local produce that is available on the day.

No qualifications are needed, from beginners to the experienced.

Aims and objectives

  • spontaneity of cooking: to allow students to enjoy the creativity of cooking
  • to understand what is good about cooking with seasonal produce. (we learn the vital relationship of food to agriculture and of food to culture)
  • menu planning, understanding how Bella Vedere does it every day and how you can design your own at home for dinner parties or for the family for the week
  • open discussion, allowing students to demystify any terms or science behind the cooking or preparation process of foods. This will also allow an open forum between basic & advanced cooking.
  • to enjoy the immediacy of everyday cooking. Which allows for a greater appreciation of fresh food over preservatives in food.
  • to preserve our food culture (slowfood.com) from the vegetable garden understanding heritage & heirloom seeds to traditional methods of cooking.
  • by having hands on classes this allows the student to comprehend cooking methods easier, to gain an understand ing of how certain kitchen equipment is used and prompts any unforeseen issues or questions that may arise for each individual student.
